What I can tell you!
There is so much I can't tell you about right now. I have gobs of submissions floating out there on the virtual desks of editors, I have designs that are "almost" done for Nelkin Designs, and I have accepted pieces that I am furiously knitting on to meet my deadlines (more on these later, I promise!). This means that though I am busy there is NO knitting I can share with you.
So, how about food, that's my next favorite thing to knitting, isn't it yours?
We had "make your own" calzones last night. We love "make your own" anything, pizza, sundaes, cupcakes, you name it.... we strive to foster independence around here.
Calzones are basically just pizza folded in half. One reason I love them is that they are huge and everyone gets leftovers for lunch the next day!
Ingredients: Ricotta and pesto (we only use little schmears of one or both on the bottom), onion, garlic, pepper, mushroom, zucchini, broccoli, mozzarella cheese, salt and pepper, olive oil, dough (I double this recipe and freeze half.)
Then we roll...
Then we build...
Then we pinch, slit and bake:
YUMMMM!
